Chia Seed Pudding

Since moving to New York I've been trying to upkeep a healthier lifestyle. I decided to incorporate chia seed pudding into my breakfast (I never used to eat breakfast in the mornings so this was a good start!). There are so many benefits to eating or adding chia seeds to your meals. After all, it is a superfood! Some of the benefits include digestive health -- its very high in fiber so one serving can provide the necessary intake for the day. Other benefits include weight loss and boosting metabolism! 

I love how versatile making chia seed pudding can be so you don't get bored of eating the same recipe everyday. My favorite recipe at the moment, however, is peanut butter! I love topping it off with either bananas, strawberries, or any fresh fruit I have on my counter! The recipe is super simple. The only difference with making each one different is replacing the additive ingredient (aka peanut butter) and adding anything of your choice! For example, for a chocolate chia seed pudding, replace the peanut butter with cacao powder! Enjoy!

peanut butter chia seed pudding:

2 cups coconut milk (or any non-dairy milk)
1/2 cup white chia seeds
1/2 tbsp vanilla extract
3-5 tbsp honey or agave (more or less depending on taste)
1/3 cup peanut butter (more or less depending on taste)

chocolate chia seed pudding:

2 cups coconut milk (or any non-dairy milk)

1/3 cup cacao powder
